Started in September 2018, the Khimdro Kuenphen Om Detshen (milk processing unit) of Phobjikha is situated below the farm road that leads to the beautiful village of Khimdro. Here, Yethro Lhamo and her colleague keep alive the dream of about 40 rural families, taking in the daily milk produce in exchange for a steady monthly income. With financial assistance from the district administration, the unit is a fully functional dairy processing center, producing almost 10 kilograms of butter and about 150 balls of cheese on a daily basis. The produce then gets packed and supplied to Thimphu and Wangdue districts, and also meets the demand of lodges and hotels in and around Phobjikha. Yethro and her team are also trying out different cheese making techniques and has hopes to extent to other villages and take their produce to more districts. While visiting Phobjikha, a visit to this milk processing unit is highly recommended if you want to learn how butter and cheese are produced in their purest form, and see how technology is helping ease the usual farming burden in rural Bhutanese communities.
